Vinification Process釀造法及過程
Harvest Date:Middle September 當年9月中旬
Vinification:Both varieties of grapes are vinified separately.Afterwards they go through a wine extraction (between 10-15%) and then the fermentation is carried out. Finally, the maceration on the skins is extended to 7/10 days.Alcoholic fermentation in stainless steel 15 days and Merlot in stainless steel Syrah 1 month in barriques ageing.兩款不同的品種各自分開釀造,然後一起進行發酵,發酵完畢後萃取初10~15%葡萄,最後進行7~10天的去皮動作。每天確實執行用雙手擠壓去除葡萄皮上的霉菌,然後放入不銹鋼大桶中進行15天酒精發酵梅洛,放入不銹鋼桶中而喜若放入橡木桶中靜置1個月。
