
品酒小記:
Tropical fruit aromas of peach and nectarine are delicately woven with lemon zest, vanilla and toast on
the nose. This medium to full-bodied Chardonnay is teeming with a vibrant array of citrus flavors,
bright acidity and a creamy, silky texture that gives way to a subtle toasty component. The finish of
stone fruits and lemon peel lingers on the palate, complementing the excellent balance that has become
a hallmark of the Dijon clones bottling. This wine may be enjoyed now or cellared for up to five years.
一開瓶後散發出新鮮的熱帶水果香氣,有水蜜桃、油桃及巧妙地結合檸檬、香草及烤土司
的香氣。中度到飽滿酒體的夏多娜富有大量的酸橙風味,淡淡的酸橙味及奶香,絲絨般的
口感給人有股舒爽的感覺。尾韻持續不斷有果香及檸檬皮的味道,各種香氣的互補及平衡
的酒體,成為第戎白酒的正字標記。可即時享用或儲存5年。

莊 園: 松嶺園的卡內羅斯相似於法國的Dijon;此酒園是位於陡峭的山坡地上,土壤結實造成高濃度的果味產生,此優質的地理環境使得松嶺園生產出世界頂級的夏多娜白酒。該區因溫度較低早晨有霧,午後則有來自附近海灣的海風,使得此區有較長的葡萄成熟期,更因此使得夏多娜白酒的糖分及果味非常平衡。
釀造過程: After hand harvesting and hand sorting, the grapes were whole cluster pressed to new, one-year-old, and two-year-old French oak Burgundy barrels for barrel fermentation. The wine was aged sur lie for nine months with occasional stirring of the lees to promote a complexity of flavors. In order to allow the true varietal character to shine through, the wine has not undergone malolactic fermentation. The wine was bottled in early August 2007.
人工採擷葡萄後,整串放入有新有舊及2年舊的法國柏根地橡木桶中進行9個月的發酵期,讓偶有的雜質沉澱並提升酒香的複雜性,為了讓此酒能完全散發出多變的特性,採取不加入乳化物跟二氧化碳來減低酸度的發酵方式,在隔年的8月初進行裝瓶。
