Varieties : 60% Merlot, 40% Cabernet Franc   60%梅洛, 40%卡貝納法蘭

Location : Saint-Vincent de Pertignas, near Saint-Emilion 靠近聖艾米濃區

Soils : clay-limestone and gravel       黏土-石灰石及砂爍混合

Area under vine / Yield : 70 hectares  葡萄園占地70公頃 

Winemaking :Our wine making techniques combine the most modern processes with the respect of time-proved traditional Bordeaux procedures. The vineyards are located on an excellent soil which gives fine, delicate, elegant wine, with a great aromatic complexity,which is further enhanced by an ageing period in oak barrels. 結合新式及傳統的玻爾多釀酒法,因葡萄園擁有非常好的土壤而生產出口感非常細緻優雅且複雜多變的香氣,且放於橡木桶中熟成更大大提高此酒的價值。 

Ageing : After going through the malolactic fermentation, the maceration before fermentation, and micro-oxygenation under pomace, the wine ages in oak barrels for 12 months (10% new barrels, 60%in barrels used once, 30% in barrels used twice.)加入微量的抗氧化物浸置後進行乳酸發酵,乳酸發酵是一種可以讓葡萄酒強化其香味與風味,以及使葡萄酒保有新鮮度的一種釀酒工序。發酵後分別將10%的原液放入全新橡木桶、60%在用過一次的橡木桶及30%在用過二次的橡木桶中熟成12個月。 

Tasting :

To the eyes : Intensive and nice colour 明亮深紅色澤

To the nose : Intensive aromas of vanilla, plums and cherries. 強烈的香草、梅子及櫻桃香氣

To the palate : Fine tannins, full-bodied with well balanced. 入口感受到酒體厚實及柔順的單寧,是款平衡度佳易入口的好酒。

Food & Wine : A well made wine you can start to drink as of today (decant it about one hour before serving).  Goes very will with a spit-roasted leg of lamb, or with partridge and cabbage. 需醒酒一小時,適合搭配串烤羊腿、雞肉及甘藍菜

小幫手筆記:

當天試飲會第一款選中的酒, 當時喝到的口感,典型波爾多的香氣,雖然說要醒酒,但是我們一開馬上就嚐鮮了,喝下去的果實味非常濃郁,也有著木桶味,口感厚重,經過一小時醒酒後圓順的口感就出來了. 此款酒可以搭配口感較重的食物,烤,炒類之重口味菜餚.
