Appearance : Cherry red. 櫻桃紅色

Aromas : Nice red fresh fruit such as cherry, well blended with some rosy flower aromas. Also, we can distinguish chestnut and hazelnut aromas and dry forest leaves. All this gives complexity and elegance to a wine that shows a unique personality and character. 散發櫻桃及隱約的玫瑰花香,堅果類如栗子及榛子及乾燥的葉味。複雜但優雅的香氣成為此酒特性。
Flavours : We first feel the natural acidity that dominates in wines from this cool valley. The volume in the mid and end palate is very interesting, with a refreshing acidity and richness, resulting in a very agreeable wine that invites you to share another glass.  By the end of the mouth, we can feel how long it remains with its complexity and remarkable fruit.

因為此酒來自寒冷的山谷而入喉後就可以感受到自然的酸度,在舌中後段更有趣,清新的酸度跟圓潤的酒體,讓人一杯接著一杯,尾韻深長,充分表現出果實的複雜性及卓越度。

Vinification Process 釀造法及過程
Harvest Date : Grapes were handpicked and selected between 21st and 31st of March. 當年321日到31日用手工挑選採擷葡萄

Pressing :整串葡萄直接壓榨
Yeast : 100% wild yeat  100% 野生酵母菌
Fermentation Temperature : Between 25º ~ 28º C 發酵溫度介於攝氏2528
Time in Oak : 熟成原液分成各半並分別放入全新及舊的法國柏根地橡木桶中14個月。

Pairing  : Fresh cheese, pork or chicken with mild sauces, pasta, mushrooms, not very spicy oriental food, sushi  and risotto. 適合搭配各式起士、塗上醬料的豬肉或雞肉、千層麵、洋菇、不要非常辛辣的中式料理、壽司及燉飯.
