Winemaking 品酒小記:
不在葡萄進行冷泡之前壓碎果實,這樣讓葡萄破碎程度降到最低的作法可以大大提升葡萄酒的單寧。整串的果實冷藏於華氏40度的低溫中去增加汁液的色澤。經過3~5天,慢慢提升溫度並注入酵母菌來進行發酵。在發酵達到最高峰時,每天打氣翻轉2~3次來做去皮的動作,然後再低溫保存來防止過多的單寧。當色澤跟口感達到完美的狀態,放入一種空氣包來慢慢壓出葡萄酒(自流酒),將自流酒跟葡萄皮再進行壓榨的榨汁酒(丹寧跟紅色素高,但酒精濃度低)混和後形成更均衡及豐富的葡萄酒,再放入法國及匈牙利的橡木桶中培養至少3個月。在酒桶中進行熟成的過程,去掉酒渣及不定時地搖晃翻攪葡萄酒,使之釋放出蛋白質,讓酒體更加飽滿。
此酒有良好細膩的單寧口感結合橡木桶的香氣,尾韻帶點輕微的酸度,具有保存陳年潛力。
