Origin: Alsatian vineyard is situated at the foot of the Vosges, between Marlenheim
and Thann.

Vinification: At harvest time, we process the grapes for the crémant like the other white cuvees. We add a yeast preparation and sugar to the wine, which provokes a second alcoholic fermentation in the bottle. The carbon dioxide formed dissolves in the wine. This gas, formed naturally, will generate the effervescence of the crémant. We store the bottles on laths. This ageing enables our crémant to enrich from its lies and increases its aromatic complexity.
Before the release of the wine, we have to remove the deposit that lies in the bottle. The bottles are first riddled on racks to collect the lies in the neck. Then, the disgorging consists in freezing the deposit in order to remove it and to close again the bottle with the definitive cork and a wire-cap.
氣泡酒的發酵和釀造白酒時一樣,在已釀成的酒中加入酵母菌跟糖進行第二次發酵,酒精發酵過程中會產生二氧化碳,進而產生有如慕絲般細緻的天然氣泡。然後存放在板樁上,這樣熟成方式使得氣泡酒更豐富了她的口感及大大增加複雜的香氣。
最後所有沉澱物都會堆積在瓶口,讓瓶口的酒渣結成冰塊,再開瓶利用瓶中壓力將冰塊推出瓶外,然後用軟木塞封瓶再用金屬線圈固定。
Characteristics:
- Colour : Golden yellow. 色澤呈現金黃色澤。
- Nose : Reveals a complex aromatic bouquet over ripe fruit aromas of peach and apricot, exceptionally fresh. Subtly buttery brioche notes add a wellbalanced finesse.
帶有多重複雜的香氣,除了散發出成熟的桃子及杏仁等令人驚豔的新鮮香氣外又帶有雞蛋糕的奶油香味,使得此酒香氣平衡。
- Palate : Fine and regular bubbles. Initially fresh and powerful on the palate. An appealing round and elegant volume in the mouth. A perfectly balanced acidity gives the wine a good length.
細緻的泡泡,入口後馬上感受到新鮮圓潤的口感,優雅迷人的香氣及非常棒的酸度在口中延續不斷。
Recommendations : 適飲溫度在攝氏5~7度。
