想要製造一款好酒是非常容易的,只需要品質非常好的葡萄。而要培養出高品質的變種卡貝納,唯一要素就是要有良好且純淨的原生種葡萄。而且釀造過程要精簡,若過於繁瑣反而無法生產協調平衡的好酒。

Making great wines is easy.  One just needs good quality grapes.  To make a good quality Verietal Cabernet, one needs to make sure the raw materials (grapes) are nice and clean.  In the winery the process needs to be rather simple.  If one makes these wines in a sophisticated way, it turns out ot be a pretentious rather than nice and balanced wine.

Appearance : Deep purple red  深紫紅色
Aromas : It shows a combination of ripe currants, plum and raspberries,surrounded by touches of cedar and toast from the oak ageing.  
散發出濃郁成熟的紅醋栗、梅子及覆盆莓果香味,又因在橡木桶熟成的關係,帶有香椿及煙燻吐司味,呈現複雜的香氣。

Flavours : In the palate the wine feels juicy, round, with a nice structure and power that lingers for long time. Loaded with plum and black cherry flavours, complemented by touches of pepper and cedar. 多汁及圓潤且強勁的酒體,尾韻悠長。梅子及櫻桃的風味,伴隨著黑胡椒辛香味及香椿味。
Varietal Composition : 100% Cabernet Sauvignon 卡貝納蘇維翁
Appellation : Colchagua Valley科恰瓜山谷
Soil Type : Clay Loam 肥沃黏沙土
Age of Vines : 18 years 籐齡17年

Piring:  Beef, especially grilled, roasted or stewed,ossobuco, lentils and dishes with onion, mushrooms and herbs such as mint and thyme.
適合搭配碳烤或用蔬菜、扁豆、蘑菇及香草類如薄荷及百里香燉煮的牛肉

 


Vinification Process釀造法及過程
Harvest Date : Grapes were handpicked and selected between the 24th April and 5th of  May, 2016. 當年4月24日至5月5日用手工挑選採擷葡萄
Pressing : Neumatic press, whole cluster整串葡萄壓榨
Yeast : PDM 天然酵母菌
Time in Oak : 熟成10個月
Type of Oak: 80%法國20%美國橡木桶中
